Cook Time Factors: Higher temperature = faster cooking. Wood-fired ovens at 900°F cook Neapolitan pizzas in 90 seconds. Gas ovens at 750°F take 3-5 minutes. Electric countertop models at 500°F need 10-15 minutes. Temperature is the main factor affecting throughput.
Batch Size: Most portable and home ovens cook 1 pizza at a time. Larger wood-fired ovens (32"+) can fit 2-3 pizzas. Commercial ovens handle multiple pizzas simultaneously. Cooking multiple pizzas at once dramatically increases capacity.
Realistic Capacity: Theoretical capacity assumes non-stop cooking. Reality includes: rotating pizzas, adding fuel/adjusting heat, preparing next pizza, brief cooldowns. Reduce theoretical output by 15-20% for realistic estimates. Factor in learning curve for beginners.
